This clever “impossible pie” makes its own soft crust while it bakes. Just blend Bisquick, eggs, milk, and a touch of almond extract, pour it into a greased pie plate, and spoon your favorite pie filling right on top.
A quick cinnamon-brown sugar streusel gets scattered over everything before the second bake, giving it that crumbly golden top that everyone fights over.
Use cherry, blueberry, or apple pie filling. Or go wild and try all three across different pies next time you’re feeding a crowd.
With 21 reviews and a 4-star average, this one has been road-tested by plenty of busy home bakers.
Variations
- Cherry pie filling with almond extract is the classic combination and plays up the almond flavor beautifully.
- Blueberry pie filling with a squeeze of lemon zest in the batter adds a bright citrus note.
- Apple pie filling with a pinch of nutmeg in the streusel gives it that autumn warmth.
Kitchen Tips
- Blend the batter smooth. Lumps of Bisquick won’t dissolve during baking and you’ll get dry pockets.
- The streusel should be crumbly, not pasty. Use cold, firm butter or margarine and cut it in with a fork or pastry blender.
- Don’t skip the almond extract. It’s only a quarter teaspoon but it adds a subtle depth that ties the whole pie together.
