This is icebox dessert at its simplest. Vanilla wafers get layered with sliced bananas and vanilla-spiked whipped cream, then chilled until the cookies soften into cake-like layers that you can slice through with a spoon.

No oven, no custard, no fuss. Four ingredients and about 15 minutes of assembly are all that stand between you and a dessert that tastes like banana pudding’s laid-back cousin. Build three to four layers and let the fridge do the rest overnight.

Kitchen Tips

  • Slice bananas on the diagonal for wider pieces that cover more surface area in each layer.
  • Chill at least 4 hours, but overnight is better since the wafers soften completely and the layers meld together.
  • Whip the cream just to soft peaks so it stays light and spreadable rather than stiff.

Directions

Arrange vanilla wafers on plate in roud circle.

Add vanilla to whipped cream.

Place sliced bananas on top, cover with whipped cream.

Repeat to make 3 to 4 layers.

Refrigerate, covered at least 4 hours or overnight.
