Apple-Coconut Pie

Ingredients

Crust
1 cup margarine
6 ounces cream cheese
2 cups flour, all-purpose
1 dash salt dash
Filling
4 large apples firm
3/4 cup sugar
2 tablespoons flour, all-purpose
1/2 teaspoon salt
3 1/2 ounces coconut flaked
1 teaspoon vanilla extract
2 tablespoons margarine

Directions

CRUST: Mix margarine and cream cheese; cut in flour and salt with two knives or pastry blender.

Chill. Divide dough, roll half on a lightly floured board, and line a 9 or 10 inch pie pan with pastry.

Roll out remainder of dough for top crust and set aside.

Note: Crust may be patted into pan rather than rolling it FILLING: Peel and core apples; slice into prepared pie crust.

Mix sugar, flour, and salt and sprinkle over apples.

Cover with coconut, and sprinkle with vanilla.

Dot with margarine.

Fit top crust over pie and cut slits in top for steam to escape.

Bake at 400F degrees for 10 minutes; reduce heat to 300F degrees and cook for an additional 35 to 40 minutes.
