75 minThis pie happens in stages. First, spiced apple slices and walnuts go into an unbaked shell and bake at high heat for 15 minutes to set the crust and start cooking the fruit.
Then you drop the temperature and pour a rich cream cheese custard over the apples. The custard bakes slowly, setting into a smooth layer that contrasts with the tender fruit below.
The two-temperature method ensures the crust gets crisp while the custard stays silky.

Ingredients
Directions
Mix together the apple slices, ¼ cup of the sugar, cinnamon, and nutmeg.
Arrange in the pastry shell.
Sprinkle the nuts over the apples.
Bake in a preheated 450 degree F oven for 15 minutes.
Remove from the oven and turn the heat down to 325℉ (160℃).
Cream together the remaining sugar, salt and the cream cheese.
Add the eggs and mix until smooth.
Add to this the cream and vanilla and mix well.
Pour over the apples in the pie shell and bake in the 325 degree F oven for 40 minutes.
