Granola-Buttermilk Muffins

Ingredients

1 each egg
1/2 cup brown sugar packed
1/3 cup vegetable shortening
1 cup buttermilk
1 1/2 cups granola slightly crushed
1 1/4 cups flour, all-purpose
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda

Directions

Heat oven to 400 degrees F.

Grease bottoms of 12 medium muffin cups, 2 1/2 x11/4 inch.

Beat in brown sugar, shortening and buttermilk thoroughly.

Stir in remaining ingredients just until flour is moistened (batter will be lumpy).

Fill muffin cups 3/4 full.

Bake until light brown, 20-25 minutes.

Immediately remove from pan; serve warm.

30-Minute Beef Stroganoff

we enjoyed this recipe very much--I added 1/2 tsp of garlic powder to beef as it was browning, and used beef broth and nonfat yogurt. I will make it again.
