45 minThese muffins get their tender texture from applesauce and their natural sweetness from chopped dates and a touch of brown sugar.
Whole wheat flour and double bran cereal give them a seriously satisfying chew with plenty of fiber to keep you fueled through the morning.
The batter works with skim, soy, rice, or tofu milk, so they fit right into most dietary needs.
Bake a batch on Sunday and freeze them. Grab one each morning all week for an easy, wholesome grab-and-go breakfast.
Pro Tips
- Let the batter rest a full 5 minutes so the bran absorbs liquid and the muffins bake up tender, not crumbly
- These work in standard or mini muffin tins; reduce baking time by 5-8 minutes for minis
- Swap honey for brown sugar for a slightly floral sweetness

Directions
