Hearty date bran muffins made with whole wheat flour, applesauce, and bran cereal for a fiber-packed breakfast you can feel good about. Naturally sweetened and freezer-friendly.

These muffins get their tender texture from applesauce and their natural sweetness from chopped dates and a touch of brown sugar.

The batter works with skim, soy, rice, or tofu milk, so they fit right into most dietary needs.

Directions

Add baking soda and water (boiling water) and stir.

Set aside to cool.

Preheat oven to 375℉ (190℃).

In large mixing bowl combine all ingredients and mix well.

Allow to stand until dry ingredients absorb some liquid.

(about 5 minutes.) Spoon into muffin tins that have been sprayed with a cooking spray.

Bake 25 minutes or until done. Can use regular size muffin tins or the mini ones. These muffins freeze well after they are baked and cooled.
