Cherry filling for pierogies turns a bowl of pitted cherries into the heart of a Polish summertime dessert dumpling. The whole point is to keep the fruit pure and bright, with just a touch of acid (or sugar, for tart cherries) to balance the natural sweetness. No cornstarch, no thickeners, no boiling down into jam. Just clean cherry flavor inside the dough.

Lightly pressing the cherries in a strainer first is what keeps the pierogi from blowing out in boiling water. Excess juice creates steam pockets that burst the seams, so a gentle squeeze removes the worst of it without ruining the fruit’s shape.

Fill and seal the pierogi immediately. Sitting around with sugar or salt on them pulls more juice from the fruit and waterlogs the dough.

Directions

Wash and drain cherries.

Lightly press cherries in a strainer or colander to remove some juice.

Place cherries in a medium bowl.

If sweet cherries are used, sprinkle with lemon juice.

If tart cherries are used, add sugar.

Fill pierogi shells and process immediately, before juice is drawn out of fruit.
