Chicken And Turkey Sausage Gumbo

Ingredients

2 pounds chicken cut into serving size
1/2 pound turkey sausage
1/2 cup sweet bell pepper finely chopped
2 1/2 cups flour, all-purpose roux
1 teaspoon red pepper flakes ground
1/2 cup scallions, spring or green onions finely chopped
9 cups water
2 cups onions finely chopped
1/2 cup celery finely chopped
1 1/2 teaspoon salt
1 each bay leaf
2 tablespoons parsley leaves fresh, finely chopped

Directions

Remove the skin, fat and wings from the chicken and discard. Spray the inside of as large skillet with non fat cooking spray and place over high heat. Brown the chicken, turning often. Remove the skillet from the heat and move the chicken pieces to a platter. Add 1 cup of the water to the skillet, scraping the bottom to loosen all of the browned bits. Return the chicken to the skillet and set aside.

Place the remaining 8 cups of water in a 5 quart Dutch oven over high heat and bring to a boil. Add the chicken and pan juices, along with the rest of the ingredients, except for the green onions and the parsley. Cook, uncovered, 25 minutes, stirring occasionally. Stir in the onions and the parsley and cook for 5 more minutes. Remove the bay leaf before serving.

Sounds like a pretty good recipe except for that turkey sausage. I'd prefer another kind. Lots of garlic would also do the recipe wonders. Besides that, looks pretty good to me! I'd give it a try instead of mine one time just to see.

Chicken a la Nancy

This is one of our favorites. I add more lemon. It's sooo good! I looked online to find it because I misplaced my "Award winning recipes" cookbook in the move. I use vinegar instead of wine (about half the amount) because we don't stock wine.
