Chicken And Sausage Jambalaya

If you're having friends over, then don't hesitate to make this hearty dish made with succulent ham, smoked sausage and hot pepper sauce.

Ingredients

3 pounds chicken whole fryer size (smallish)
1 each celery rib
2 cups rice long grained
1 pound ham cubed
1 cup onion chopped
3/4 cups parsley leaves chopped, fresh
1 large bay leaf
2 teaspoons salt
1/4 teaspoon red hot pepper sauce (eg. Tabasco)
2 large onions
3 each garlic cloves
1 pound smoked sausage
1/4 cup butter or 1/2 margarine stick
1 cup green bell pepper chopped
6 ounces tomato paste
1/4 teaspoon thyme leaves
1/2 teaspoon black pepper
1/4 cup scallions, spring or green onions chopped

Directions

Put chicken, 1 onion, (cut in half), celery and 1 garlic clove in pot.

Cover with water. Cook for approximately 1 hour or until chicken is tender. Cook 2 cups of rice in 5 cups chicken broth (20 to 25 minutes or until liquid is absorbed.) Debone chicken and cut sausage into 1/2 inch cubes. Fry sausage and ham in Dutch oven until lightly browned. Remove meat from pot and add margarine. Saute 1 chopped onion, pepper and 1/2 cup chopped parsley until tender. Add chicken, sausage and ham to vegetables.

Stir in 2 minced garlic cloves, tomato paste, bay leaf, thyme, salt pepper and Tabasco. Add cooked rice and mix thoroughly. Simmer over low heat for 15 minutes. Stir frequently. Remove bay leaf and toss in 1/4 cup chopped parsley and 1/4 cup chopped green onion tops.

Stir Fry of Broccoli and Chicken

This recipe definitely needs some "tweaking", but it still tasted pretty good. I added a little soy sauce & white wine & sherry.
