Peanut Butter-Oatmeal Cookies # 2

A terrific light chocolate cookie with a touch of peanut butter. I cut the shortening to 1/2c. with the expected drier results, but I still enjoyed them.

Ingredients

3/4 cup vegetable shortening
1/2 cup sugar granulated
1 cup brown sugar packed
1 large egg
1/4 cup water
1 teaspoon vanilla extract
1/4 cup cocoa powder
1/2 cup peanut butter
1/4 cup molasses
1 cup flour, all-purpose
1/2 teaspoon baking soda
1 teaspoon salt
3 cups oats, quick cooking uncooked
1 x nuts optional, chopped

Directions

Beat together with a wooden spoon, shortening, 2 sugars, egg, water, vanilla, cocoa, peanut butter and molasses until creamy.

Combine flour, baking soda and salt and add to mixture.

Add oatmeal and nuts, and blend well.

Chill dough for 15 minutes.

Drop by rounded teaspoonfuls onto greased cookie sheets.

Bake at 350` for 12 to 15 minutes.

Makes 4-5 dozen cookies.
