Thinly sliced chicken breast, chopped ham, courgettes (zucchini), mushrooms, and onions simmer in chicken stock for just five minutes. A quick stir of soy sauce blended with cornstarch thickens everything into a glossy, savory broth that’s closer to a Chinese-style soup than a chunky stew.

Bring to the boil.
