Oatmeal Apple Cheese Cookies

Ingredients

3/4 cup flour, all-purpose
1/3 cup brown sugar packed
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
2/3 cup margarine softened
1 each egg
1 teaspoon vanilla extract
1 1/2 cups rolled oats
1 cup cheddar cheese shredded
1 cup nuts chopped
1 cup apples peeled, chopped

Directions

In a large bowl, combine flour, brown sugar, baking powder and cinnamon.

Mix in butter with pastry blender or spoon.

Add egg, vanilla, oats, cheese, nuts and apples.

Mix well.

Drop by heaping teaspoonfuls onto ungreased cookie sheets ( cookies will spread slightly).

Bake at 375 degrees F for 12-14 minutes or until golden.

Remove to wire racks to cool.

Store airtight.

Freeze well.

Baba Ganoush

This was FANTASTIC!! I am not a huge fan of eggplant, but I recently tried baba ganoush at a restaurant. I really, really liked it so I had to find a recipe to try at home. This was a huge success. Very easy recipe to make and very, very tasty!!
