1 hrsThese cookies are done before your oven would even finish preheating. Boil the sugar, cocoa, margarine, and milk together for exactly one minute, then beat in peanut butter, oats, and vanilla. Drop them onto waxed paper and walk away.
The one-minute boil time is critical. Boil too long and the sugar mixture gets too stiff, making the cookies crumbly and dry. Too short and they won’t set properly, staying sticky and loose on the paper. Set a timer and watch the clock.
Peanut butter and cocoa together create a flavor that’s richer than either one alone. The oats absorb the hot sugar mixture and firm up as they cool, giving each cookie a chewy, fudge-like texture with a satisfying bite from the oat flakes.
