These no-bake peanut butter balls pack a serious mocha punch from instant coffee crystals ground fine and mixed with cocoa powder. The coffee doesn’t just add flavor. It amplifies the chocolate, making two teaspoons of cocoa taste far richer than it has any right to.

Crunchy peanut butter holds everything together while the oatmeal gives the balls enough body to roll without falling apart. The almond extract is a quiet player here, adding a warm, nutty depth that rounds out the mocha flavor so it doesn’t taste like you just stirred cocoa into coffee.

Grinding the instant coffee crystals to a fine powder before mixing is a step worth taking seriously. Coarse granules won’t dissolve in just three tablespoons of water and you’ll bite into gritty, bitter pockets instead of smooth mocha flavor throughout.

Directions

Press the coffee crystals until you get a fine ground mixture.

Mix together powdered milk, sugar substitute, cocoa, coffee, water, extract, oatmeal, and peanut butter.
