Mint Molasses Cookies

Ingredients

2 cups flour, all-purpose sifted
1/4 teaspoon salt
2 teaspoons baking soda
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon cloves ground
3/4 cup vegetable shortening
1 cup brown sugar firmly packed
1/4 teaspoon mint extract
1 each egg
1/4 cup molasses
1/4 cup sugar granulated

Directions

Sift flour again with the salt, soda and spices.

Thoroughly cream together the shortening, brown sugar and mint extract.

Beat in the egg until light and fluffy.

Add molasses; mix well.

Mix in dry ingredients until well blended.

Chill at least 2 hours.

Shape into balls the size of walnuts.

Roll in granulated sugar, and place 2 inches apart on a greased cookie sheet.

Bake in a 350 degree F oven until crisp and browned, about 15 minutes.
