Ingredients

1 cup pumpkin
2 each egg whites whipped
1 cup brown sugar packed
1 1/2 cup flour, unbleached all-purpose
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
3 cups rolled oats
1 cup raisins, seedless

Directions

Preheat oven to 350 degrees. Prepare baking sheet with cooking spray. In a mixing bowl, combine pumpkin and egg whites. In another mixing bowl, combine sugar, flour, baking soda, cinnamon, nutmeg, cloves, oats, and raisins. Mix wet ingredients with dry ingredients just until moistened. Drop by tablespoonfuls onto prepared baking sheet, 2 inches apart. Bake for 15 minutes, or until they seem firm.

Banana Nut Chocolate Chip Bread

This was DELICIOUS! I baked a loaf last week for a get-together and everyone loved it (even those who don't care much for chocolate or bananas). This recipe is definitely a keeper. I baked another loaf last night. Today I had a piece with my coffee and it was great. Give it a try. You won't be disappointed.
