Lemon Yogurt Cookies

Ingredients

1/2 cup margarine softened
1 1/4 cups sugar granulated
1/2 cup yogurt, non-fat plain
1 x yogurt lemon-flavored
2 each egg whites
1 tablespoon lemon zest grated
1/2 teaspoon vanilla extract
2 cups oats, quick cooking or old-fashioned, rolled
1 1/2 cups flour, all-purpose
1 teaspoon baking powder
1/2 teaspoon baking soda
1 x nonstick cooking spray
1/4 cup powdered sugar

Directions

Beat margarine and granulated sugar until fluffy.

Add yogurt, egg whites, lemon peel and vanilla; mix until well blended.

Combine oats, flour, baking powder and baking soda.

Gradually add dry ingredients to margarine mixture; mix well.

Cover; refrigerate for 1 to 3 hours.

Preheat oven to 375 degrees.

Lightly coat cookie sheet with nonstick cooking spray or oil lightly.

With lightly floured hands, shape dough into 1-inch balls.

Place on prepared cookie sheet.

Using bottom of glass dipped in granulated sugar, press dough into 1/8-inch-thick circles.

Bake 10 to 12 minutes or until edges are lightly browned.

Let cool 2 minutes on cookie sheet; remove to wire rack.

Sift powdered sugar over warm cookies. Let cook completely.

Store tightly covered.

Fresh Coconut Cake

Absolutely fabulous! We added one can of pineapple to the frosting that was between the two layers and it was out of this world. Needs to be bigger. Recommend making 3 layers or making a double sheet cake out of it. It will go fast!
