Ingredients

1 cup butter
1 cup sugar
1 cup brown sugar
1 each egg
1 cup vegetable oil
1 cup rolled oats
1 cup cornflakes crushed
1/2 cup coconut flakes
1 cup pecans chopped
3 1/2 cups flour, all-purpose
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
1 x powdered sugar

Directions

Preheat oven to 325 degrees F.

Cream butter and sugars until light and fluffy.

Add egg and blend.

Add salad oil, stirring until oil is well-blended.

Add oats, cornflakes, coconut and nuts.

Stir until mixed. Add flour, soda, salt and vanilla and mix well.

Form into balls about the size of a walnut.

Place on an ungreased cookie sheet and flatten with a fork dipped in water.

Bake for 12 minutes before removing.

Sprinkle with powdered sugar.

Cheesy Ham Bake

My family loved this simple easy meal, even my very picky son! Since my son is graduating from high school this year and he likes it so well it will be part of our open house buffet. It's also inexpensive to make. The only changes I would make would be to add at least twice the salt and pepper. I'm not one to use a lot of salt, but everyone was adding salt and pepper. The second time I made it I doubled both and they were all still adding. Otherwise it's great. Thanks!
