30 minThese proper British gingerbread men get their signature caramel depth from golden syrup, that magical ingredient that makes UK biscuits taste like childhood memories.
Rubbing cold butter into flour until it resembles breadcrumbs gives you that perfect sandy texture before the egg and syrup bring it all together.
Roll them thin, cut out your gingerbread shapes, and press in currants for eyes and buttons before baking to golden perfection at 375°F.
The result is a cookie with crisp edges and a slightly chewy center that holds its shape beautifully, whether you’re decorating for the holidays or just need a cuppa tea companion.
Baking Tips
- Find golden syrup in the international aisle or substitute half honey and half light corn syrup in a pinch
- Chill the dough for 15 minutes if it becomes too soft to roll while working
- Re-roll scraps only once to keep the cookies tender, as overworking toughens the dough
Ingredients
Directions
Grease three baking sheets.
Sift the flour, baking soda and ginger into a bowl.
Rub the butter into the flour until the mixture looks like fine crumbs.
Stir in the sugar.
Beat the syrup into the egg and stir into the bowl.
Mix to form a dough and knead until smooth.
Divide into two and roll out on a lightly floured surface to about ¼ inch thick.
Using a gingerbread man cutter, cut out figures and place them on the baking sheets.
Decorate with currants. Bake in the oven at 375℉ (190℃) F for 12 to 15 minutes until golden.
Cool slightly then places on a wire rack.
