The two-minute boil is not a suggestion. Boil too short and the cookies won’t set; they’ll stay sticky and flat. Boil too long and the sugar overcooks, leaving you with dry, crumbly lumps. Set a timer.
Work fast once you pull the pot off the heat. Stir in the peanut butter, vanilla, and oats immediately and start dropping by the tablespoon onto wax paper. The mixture firms up as it cools, and if you wait too long it becomes impossible to scoop.
