45 minSoft, cake-like applesauce cookies with warm spices, chewy raisins, and whole bran flakes for crunch, topped with a homemade caramel frosting that sets into a sweet, glossy shell. These are old-fashioned fall baking at its best.
The applesauce keeps these cookies incredibly moist and soft while adding a subtle fruity sweetness. Combined with molasses, brown sugar, allspice, and cloves, every cookie tastes like autumn in a bite.
The caramel frosting is worth the extra step. Brown sugar boiled in melted butter for just one minute, cooled slightly, then beaten with milk and powdered sugar until smooth. It firms up into a chewy-sweet topping that’s leagues beyond a basic glaze.
Chef Tips
- Cream the butter and brown sugar thoroughly before adding the wet ingredients. Good creaming creates a lighter, puffier cookie.
- Fold in the bran flakes gently at the end. Crushing them turns them to dust and you lose the crunch.
- Cool the cookies completely before frosting. Warm cookies melt the frosting into a sticky puddle.
- Boil the frosting base for exactly one minute. Longer makes it too thick to spread; shorter and it won’t set properly.
Variations
- Add chopped walnuts or pecans alongside the raisins for a nuttier cookie.
- Swap raisins for dried cranberries for a tarter, more festive look.
- Use chunky applesauce for more visible apple pieces in each cookie.
