These fat-free oatmeal cookies prove you can have a chewy, satisfying cookie without any butter, oil, or shortening. The combination of egg whites (no yolks) and corn syrup does the work that fat normally does. Egg whites provide structure and a gentle protein binding, while corn syrup keeps the cookies soft and chewy by interfering with sugar crystallization.

The corn syrup is essential to the texture, not optional. Replace it with honey or maple syrup and the cookies still work but lose their distinctive chewiness. Replace it with more granulated sugar and you get crispy, candy-like cookies that snap rather than bend. The corn syrup is the textural hero.

Directions

Preheat oven 325℉ (160℃).

Spray cookie sheets with spray.

In large bowl combine dry ingredients.

Stir in all but raisins and mix well.

Add raisins and drop by teaspoonsful onto cookie sheets.

Bake 10 minutes.

No Fat but way too much sugar and carbs.

The oats help to boost complex carbs, and one can always reduce the sugar (which doesn't seem excessive to me). They're pretty much fat-free - there's no claim that they're carb free! Why are you looking at cookie recipes if you want to remove the fat, sugar, and carbs completely? :)
