30 minThese fat-free oatmeal cookies prove you can have a chewy, satisfying cookie without any butter, oil, or shortening. The combination of egg whites (no yolks) and corn syrup does the work that fat normally does. Egg whites provide structure and a gentle protein binding, while corn syrup keeps the cookies soft and chewy by interfering with sugar crystallization.
The corn syrup is essential to the texture, not optional. Replace it with honey or maple syrup and the cookies still work but lose their distinctive chewiness. Replace it with more granulated sugar and you get crispy, candy-like cookies that snap rather than bend. The corn syrup is the textural hero.
Use quick-cooking oats, not old-fashioned rolled oats. Quick oats are smaller and absorb moisture faster, giving you tender cookies with the right chewy texture. Rolled oats stay too distinct and chunky.
Without fat to provide flavor, the cinnamon, vanilla, and raisins do the heavy lifting. Don’t reduce them or skip them; they’re carrying the cookie’s entire flavor profile.
Don’t overbake. These cookies firm up dramatically as they cool because there’s no fat to keep them soft. Pull at exactly 10 minutes when the centers still look slightly underdone, and let them firm on the cookie sheet for a minute before transferring.
Pro Tips
- Plump the raisins in warm water for 10 minutes before adding. They stay tender during baking instead of going hard.
- For chewier cookies, use light corn syrup. Dark corn syrup tints the cookies brown but adds a slight molasses note.
- Store in an airtight container with a slice of bread to keep them soft. Without fat, these dry out faster than regular cookies.
Variations
- Swap raisins for dried cranberries, chopped dates, or chopped dried apricots.
- Add ¼ teaspoon of nutmeg and a pinch of cloves for a warmer spice profile.
- Stir in ¼ cup of mini chocolate chips for a fat-free-ish version with chocolate (chips have some fat but minimal compared to butter).

No Fat but way too much sugar and carbs.
The oats help to boost complex carbs, and one can always reduce the sugar (which doesn't seem excessive to me). They're pretty much fat-free - there's no claim that they're carb free! Why are you looking at cookie recipes if you want to remove the fat, sugar, and carbs completely? :)
