Diabetic Spice Oatmeal Cookies

They didn't seem to hold together until I added 2/3 cup of flour. Once I added the flour they were delicious.

Ingredients

1 cup water
2 cups raisins, seedless
4 tablespoons artifical sweetener
1/2 cup butter
1/2 teaspoon salt
1/4 teaspoon allspice
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
2 1/2 cups oatmeal
1/2 cup nuts chopped
1 teaspoon baking soda

Directions

Boil 1 cup water and 2 cups raisins.

Cool for 5 minutes. Add 4 tablespoons sweetener, 1/2 cup butter, 1/2 teaspoon salt, 1/4 teaspoon allspice, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, 2 1/2 cups oatmeal, 1/2 cup chopped nuts, and 1 teaspoon soda.

Form into balls and bake on lightly greased cookie sheet for 15 minutes at 325 degrees.

All-Day-Long Potatoe Soup

As I have a large family, I tripled this recipe. Only, I added vegetables, bacon, and cheese. The potato flakes do help with texture but instead of milk, try heavy cream. It makes for a really good, hearty soup.
