Coconut Oatmeal Cookies
Ingredients
DirectionsPreheat oven to 375 degrees. Sift together flour, 1 cup granulated sugar, baking powder, baking soda and salt in a large bowl. Set aside. Combine brown sugar, shortening, eggs and vanilla; beat well with an electric mixer. Stir into flour mixture. Stir in oats, walnuts and coconut. Dough will be slightly dry. Roll dough into small balls; dip tops in granulated sugar. Place on ungreased cookie sheet. Bake for 12 to 14 minutes. Let cookies remain on cookie sheet 1 to 2 minutes before removing to wire rack.
