Three-ingredient coconut cookies are the cookie equivalent of a magic trick. There’s no flour, no eggs, no butter, no leavening agent.

Just shredded coconut, semisweet chocolate chips, and sweetened condensed milk. Yet somehow, what comes out of the oven 15 minutes later is a chewy, golden-edged cookie with the dense, almost candy-like character of a coconut macaroon crossed with chocolate chip.

The magic ingredient is the sweetened condensed milk, which acts as both binder and sweetener. As it bakes, the milk solids caramelize against the coconut and create a sticky matrix that holds the cookie together without flour. The water content evaporates just enough to set the structure, while the milk fats crisp the edges.

The low-and-slow 325°F (165°C) bake is critical here. Higher heat would burn the coconut and the milk solids before the centers finish setting up, leaving you with charred lace cookies.

Pro Tips

  • Use sweetened flaked coconut for chewier cookies, or shredded unsweetened coconut for less sweetness and more texture.
  • Drop the dough onto parchment-lined sheets, not bare greased sheets. The condensed milk caramelizes hard and these will stick.
  • Watch the bake closely from minute 13. The change from golden to burnt happens fast with this much sugar.
  • Let them cool completely on the sheet. Warm cookies fall apart, but they firm up to perfect chewiness once cool.

Variations

  • Swap chocolate chips for chopped dark chocolate chunks for bigger melted pockets.
  • Stir in a teaspoon of almond extract for a coconut-almond Mounds bar effect.
  • Drizzle the cooled cookies with melted white chocolate or roll them in toasted coconut flakes.
