30 minLooking for a St. Patrick’s Day cookie that kids will actually get excited about? These are it.
A chewy brown sugar cookie dough loaded with green candy-coated chocolate pieces. The dough comes together fast with shortening, brown sugar, vanilla, and just enough flour to hold everything in place. The green candies add color, crunch, and little pops of chocolate throughout.
Drop them by the tablespoon, bake for 8 to 10 minutes, and you’ve got three dozen festive cookies before the kitchen even gets messy.
Pro Tips
- Pull them at 8 to 10 minutes for chewy cookies. They’ll look slightly underdone on the baking sheet, but they firm up as they cool on the foil.
- Do NOT overbake. This is the most important rule for these cookies. Crispy edges are fine, but the center should stay soft.
- Space the dough 3 inches apart. These spread more than you’d expect.
- Swap in red and green candies for Christmas cookies, or use pastels for Easter. Same recipe, different holiday.

Directions
Pre-heat oven to 375℉ (190℃) (190oC). Place sheets of foil on countertop for cooling cookies.
Combine brown sugar, shortening, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Beat egg into creamed mixture.
Combine flour, salt and baking soda. Mix into creamed mixture at low speed just until blended. Stir in candy-coated pieces.
Drop rounded tablespoonfuls (15 mL) of dough 3 inches (7 cm) apart onto ungreased baking sheet.
Bake one baking sheet at a time at 375℉ (190℃) (190oC) for 8 to 10 minutes for chewy cookies, or 11 to 13 minutes. DO NOT OVERBAKE. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely.
