Chocolate bourbon balls are no-bake holiday treats made with crushed vanilla wafers, walnuts, honey-sweetened melted chocolate, and a splash of bourbon. A Southern Kentucky tradition.

20 minThese are Kentucky’s contribution to the Christmas cookie tin, and they’re what happens when a pastry chef runs out of patience for tempered chocolate work. Melted chocolate chips and honey bind crushed vanilla wafers and ground walnuts into a pliable dough, a tablespoon of bourbon goes in raw (the alcohol doesn’t cook off), and the mixture rolls into balls dusted in sugar. No oven, no candy thermometer, no fuss.
The aging is the whole point. Store them in a tin for a week to ten days and the flavor deepens considerably. The bourbon mellows from raw heat into something warmer and darker, and the honey keeps the inside soft and fudgy instead of drying out. A ball made yesterday versus one made ten days ago is like first-date you versus ten-years-married you. Both fine, but one has history.
Don’t skimp on the bourbon. Use a real Kentucky bourbon (Maker’s, Buffalo Trace, Woodford) rather than a bottom-shelf blend. One tablespoon doesn’t sound like much, but the flavor carries through every bite.

- Crush the vanilla wafers finely in a food processor. Coarse crumbs make the balls fall apart when rolled.
- Toast the walnuts in a dry skillet before grinding. Raw walnuts taste flat in the finished ball.

Directions
Mix chocolate chips and honey in 1½ quart casserole or bowl.
Microwave uncovered on high 1 to 2 minutes or until chips are melted; stir.
Stir in vanilla wafers, walnuts and whiskey.
Shape into 1-inch balls.
Roll balls in sugar.
Store in tightly covered container up to 10 days.
Flavor will continue to develop as they stand.
