Chewy Applesauce and Peanut Butter Cookies

Ingredients

3 1/2 cups flour, all-purpose
1/2 teaspoon salt
1 1/2 teaspoons baking soda
1 cup applesauce unsweetened
1 cup peanut butter crunchy
2 1/2 cups brown sugar firmly packed
2 each egg whites
2 teaspoons vanilla extract

Directions

In small bowl, combine flour, salt and soda; set aside.

Thoroughly mix together remaining ingredients.

Add dry ingredients, mixing until combined.

Drop by rounded measuring tablespoonfuls onto cookie sheets coated with non-stick cooking spray.

Bake in 375 degree F oven about 10 minutes or until light golden brown.

This pie is easy to make - the ginger seems to make it special without being overpowering and it's a nice change from apple! I've used different varieties of pears and all work well. Be careful the edges of the pie crust doesn't burn!
