Wholesome oat cookies sweetened with honey and studded with fresh apples. Soft, cake-like texture with optional raisins. Naturally lower in refined sugar.

These aren’t your typical crispy oatmeal cookies. They bake up soft and tender, almost like little apple cakes, thanks to fresh chopped apples mixed right into the dough.

Honey replaces most of the sugar, and a blend of whole wheat and all-purpose flour adds nutty depth without going full health-food-store.

Press thin apple slices on top before baking if you want a fancy presentation that looks harder than it is.

Chef Tips

  • Dice apples very fine (¼ inch) so they distribute evenly and bake through
  • Dip fingers in water when flattening dough to prevent sticking
  • Add raisins or leave them out based on preference; both versions work
  • Store in airtight container; these stay soft for days unlike crisp cookies

Directions

Preheat oven to 375℉ (190℃).

In a medium bowl, combine oats, flours, baking powder, baking soda, salt and cinnamon.

Stir to combine. Stir in raisins if using, and apples.

In a large bowl, combine egg, honey, oil and milk.

Stir in dry ingredients.

Mix to form a smooth batter.

Drop batter onto ungreased baking sheets using a rounded teaspoon of dough for each cookie, leaving 2 inches of space between each.

Dip fingers in water; press dough down to about 1½ inch diameter.

Bake for 10 to 12 minutes or until lightly golden.

Transfer cookies to rack to cool.

Note: You can add a thin slice of apple over cookies before baking for a fancier result.
