Cherry Coke Salad

Retro Southern Jello salad with dark cherries, crushed pineapple, and pecans set in cherry gelatin and Coca-Cola. Molded, chilled, and ready to steal the potluck.

2 hrsIf you grew up in the South, you already know that Jello salad isn’t really a salad and nobody cares.
This one’s a church-supper classic: dark pitted cherries heated in their own juice, dissolved with cherry Jello, then mixed with crushed pineapple, chopped pecans, and a full cup of Coca-Cola.
The Coke adds fizzy sweetness and a hint of caramel that takes this from “just Jello” to something people actually fight over at the buffet table.
Pour it into a mold, chill until firm, and flip it out onto a platter like it’s 1965.
Southern Tips
- Let the Coke go slightly flat before adding it. Too much fizz creates bubbles that cloud the gelatin.
- Oil the mold lightly before pouring in the mixture. A quick spray of cooking oil makes unmolding so much easier.
- To unmold, dip the bottom of the mold in warm (not hot) water for about 10 seconds, then invert onto a plate.
- Toasted pecans add a deeper flavor than raw, but either way, don’t skip them. The crunch is what makes this special.

Directions
Heat cherries and their juice to boiling.
Remove from heat and add Jello.
Stir. Add pinapple, juice and all.
Pour in coke and nuts. Pour into an oiled 6 cup mold.
Let cool, then refrigerate at least 2 hours or until set.
Serve cold.
