35 minStuffed chicken breasts don’t have to be a big production.
Pound the chicken thin, roll a spoonful of cream cheese inside, dip in butter and bread crumbs, and pop it in the microwave. That’s the whole recipe.
The cream cheese melts into a gooey, tangy center while the bread crumbs give the outside a bit of texture. It’s not going to win any beauty contests, but the flavor delivers.
Three ingredients. One dish. Dinner sorted.
Kitchen Tips
- Pound the chicken to an even thickness so it cooks uniformly in the microwave
- Secure the rolls tightly with toothpicks so the cream cheese doesn’t leak out
- For a crispier finish, pop the cooked rolls under the broiler for 2 minutes after microwaving
Variations
- Mix herbs or garlic into the cream cheese for an extra flavor boost
- Swap cream cheese for pepper jack slices for a spicy kick
- Bake at 375 for 25 minutes instead of microwaving for a more golden crust
