Stuffed chicken breasts don’t have to be a big production.

Pound the chicken thin, roll a spoonful of cream cheese inside, dip in butter and bread crumbs, and pop it in the microwave. That’s the whole recipe.

The cream cheese melts into a gooey, tangy center while the bread crumbs give the outside a bit of texture. It’s not going to win any beauty contests, but the flavor delivers.

Three ingredients. One dish. Dinner sorted.

Kitchen Tips

  • Pound the chicken to an even thickness so it cooks uniformly in the microwave
  • Secure the rolls tightly with toothpicks so the cream cheese doesn’t leak out
  • For a crispier finish, pop the cooked rolls under the broiler for 2 minutes after microwaving

  • Mix herbs or garlic into the cream cheese for an extra flavor boost
  • Swap cream cheese for pepper jack slices for a spicy kick

Directions

Pound out chicken breasts between two sheets of wax paper until thinned.

Put a tablespoon of cheese in center each chicken breast and roll up and secure with a toothpick.

Roll the chicken breast in butter, then in bread crumbs.

Place in a microwave dish and cook on high for 6 to 9 min.
