Punch bowl cake is the kind of dessert that shows up at every church supper, family reunion, and holiday potluck across the South. It’s not fussy and it’s not trying to be. White cake layers, vanilla pudding, fresh bananas, crushed pineapple, sweetened strawberries, and a cloud of whipped topping, all stacked in an actual glass punch bowl so you can see every colorful layer from the side.

Assembly is the whole game here. The cake goes in first, then pudding, then sliced bananas dipped in pineapple juice (that acid bath keeps them from browning), then drained crushed pineapple. Second cake layer, repeat. Thawed sweetened strawberries go on top of the whole thing, followed by whipped topping and a sprinkle of nuts.

No baking skill required beyond following the box cake directions. The magic is in the layering and the overnight chill that lets the juices soak into the cake.

Kitchen Tips

  • Dip every banana slice in the reserved pineapple juice. Brown bananas ruin the look of this cake.
  • Drain the crushed pineapple well. Excess juice makes the cake layers soggy instead of moist.
  • Assemble at least 4 hours ahead, ideally overnight. The flavors meld and the cake softens into something almost trifle-like.
  • Use a clear glass punch bowl. Half the appeal is seeing those layers.

Variations

  • Use yellow cake mix and chocolate pudding for a different flavor combination.
  • Swap strawberries for blueberries and add toasted coconut on top for a tropical version.

Directions

Bake cake according to package directions in 2 round pans (8 x9-inch).

Put one layer in bottom of punch bowl.

Put 1 can vanilla pudding on top.

Drain 1 can pineapple (reserve juice).

Slice 3 bananas and dip in pineapple (reserve juice).

Slice 3 bananas and dip in pineapple juice; place bananas on top of pudding.

Put drained pineapple on top of bananas.

Put second cake layer in next.

Repeat with pudding, bananas and pineapple.

Place 2 containers of sliced sweetened strawberries (thawed) on next.

Top with Cool Whip and nut topping.
