Hot fudge pudding cake that creates its own chocolate sauce as it bakes. A cocoa and honey batter topped with brown sugar and cocoa, then doused with hot water. Magic happens in the oven.

60 minThis is one of those desserts that shouldn’t work but absolutely does. You spread a simple chocolate batter in a pan, sprinkle brown sugar and cocoa over it, pour hot water on top of the whole thing, and don’t stir. During baking, the batter rises to the top and the sugar-cocoa-water mixture sinks to the bottom and transforms into a thick, gooey fudge sauce underneath.
The batter is sweetened with honey instead of white sugar, which gives the cake layer a slightly more complex, caramel-like sweetness. Cocoa does all the chocolate work, so the flavor is deep and intense without needing melted chocolate.
The key instruction is “do not stir” after pouring the water. The layers need to stay separated going into the oven so gravity can do its thing during baking.
Kitchen Tips
- Use hot water, not warm. Hot water dissolves the brown sugar and cocoa topping quickly and creates the sauce layer.
- Do not open the oven during the first 30 minutes. The cake needs steady heat to set on top while the sauce develops underneath.
- Scoop, don’t slice. This isn’t a neat cake. Spoon it out so you get both the cakey top and the fudge sauce from the bottom in every serving.
- Serve warm with a scoop of vanilla ice cream for the full hot-fudge-sundae experience.

Ingredients
Directions
Sift the first four ingredients together.
Mix the next four ingredients together.
Combine the two and place in a 9 x 9 x 2 inch baking pan.
Mix the topping ingredients and sprinkle over the top.
Pour 1 ¾ cups hot water over the top of the pan, do not stir.
Bake at 3350 degrees for 40 minutes.
Remove from oven and cool.
