Ingredients

1 1/2 cups almonds toasted, chopped
1 package cake mix, yellow
1/2 cup vegetable oil
1/2 cup water
1/2 cup amaretto liquer
1 teaspoon almond extract
1/2 cup sugar
1/4 cup water
2 tablespoons butter
1/4 cup amaretto liquer
1/2 teaspoon almond extract divided
1 package instant pudding mix, vanilla
4 large eggs

Directions

Sprinkle 1 cup almonds into bottom of a well-greased and floured 10 inch tube pan, set aside.

Combine cake mix, pudding mix, eggs, oil, water, amaretto, and almond extract in a mixing bowl, beat on low speed of an electric mixer til dry ingredients are moistened. Increase speed to medium, and beat 4 min.

Stir in remaining 1/2 cup almonds. Pour batter into prepared tube pan.

Bake at 325 degrees F. for 1 hr. or til a wooden pick inserted in center comes out clean.

Cool cake in pan 10-15 min.

Remove from pan, and cool completely.

Combine sugar, 1/4 cup water, and butter in a small saucepan, bring to a boil.

Reduce heat to medium and gently boil 4-5 min., stirring occasionally, until sugar dissolves.

Remove from heat, and cool 15 min. Stir in 1/4 cup amaretto and 1/2 ts almond extract.

Punch holes in top of cake with a wooden pick, slowly spoon glaze on top of cake, allowing glaze to absorb in cake.

Aussie Meatloaf

This is an OUTSTANDING recipe! But a few tweaks to the recipe made it absolutely SUPERB. (And I never thought I'd say that about any other meatloaf recipe than Mom's.) Here's what I changed to the LOAF recipe: 1. Use half the amount of curry. 2. Add four diced celery stalks 3. Saute the onions to a golden brown before adding them to the loaf. 4. Use only half the amount of milk and water. 5. Add two roasted then diced red bell peppers. 6. Add two teaspoons of caraway seeds which have been toasted then gound to a fine powder. I guarantee you'll find yourself sleepwalking to the refrigerator in the middle of the night to sneak a few more bites! :-)
