1 hrsThis is one of those desserts that looks like you spent all afternoon on it but took maybe 30 minutes of actual effort.
A pan of brownies gets split in half, layered with strawberry fruit spread and almond-spiked whipped topping, then crowned with fresh strawberry halves and a drizzle of chocolate sauce.
The reduced-fat brownie mix and lighter whipped topping keep things on the sensible side without sacrificing any of that chocolate-meets-strawberry magic.
It’s a crowd-pleaser that works for potlucks, birthday parties, or any Tuesday that needs a pick-me-up.
Pro Tips
- Let the brownies cool completely before slicing and stacking. Warm brownies will melt the whipped topping and slide apart.
- Blend the fruit spread with water until it’s smooth and spreadable. Straight from the jar, it can tear the brownie surface.
- Keep the whipped topping away from the edges of the brownie layers so it doesn’t squeeze out when you stack them.
Ingredients
Directions
Prepare brownies according to package directions and use an 11×7-inch 20 pan. Cool completely in pan.
Blend fruit spread and 2 tablespoons of water in small bowl until smooth. Combine whipped topping and almond extract in a medium bow. Stem the strawberries and halve them (tip to stem).
Cut brownie crosswise in half (two pieces 5½ by 7-inches). Place half of brownie, flat-side down, on serving dish. Spread with fruit spread; top with 1 cup whipped topping. Spread rest of fruit spread on the second piece’s crusty side. Spread most of the whipping topping on top of that, avoid the edges. Carefully position the prepared brownie over whipped topping of first piece.
Arrange strawberry halves on the whipped topping. Drizzle chocolate sauce over that. Garnish with sprigs of mints (optional).
