1 hrsThis is the kind of recipe that gets passed around on index cards at church potlucks.
A no-fuss batter made from oil, eggs, sugar, flour, and vanilla comes together in one bowl. Spread half in the pan, layer on a whole jar of your favorite pie filling, then top with the rest of the batter and a sprinkle of cinnamon sugar.
The “surprise” is that gorgeous ribbon of fruit hiding inside a soft, slightly gummy crumb that’s somewhere between a cake and a cobbler.
Cherry is the classic choice, but blueberry, apple, and peach all work beautifully. Use whatever’s on your shelf.
Variations
- Cherry Almond: Use cherry pie filling and add ½ teaspoon almond extract to the batter.
- Apple Spice: Use apple pie filling and stir ½ teaspoon cinnamon plus a pinch of nutmeg into the dry ingredients.
- Peach Cobbler Style: Use peach pie filling and serve warm with a scoop of vanilla ice cream.
Chef Tips
- The batter is supposed to be thick and gummy. Don’t overmix or add liquid to thin it out.
- Greasing the pan well is essential since this sticky batter loves to cling.
- Double the recipe for a 13×9 pan if you’re feeding a crowd.
Ingredients
Directions

Bake in a 325℉ (160℃) oven for about 1 hour.
Note: For a 13×9 inch baking dish double this recipe.
