Friendship cake is one of those recipes that gets passed around neighborhoods along with a jar of starter and a handwritten note. This version uses applesauce in the starter mixture, which ferments gently and gives the finished cake a tangy, almost sourdough-like depth beneath all the warm spices.

The starter, flour, powdered milk, and applesauce sit together in a covered bowl in a warm spot before baking. That resting time lets the natural fermentation develop flavor and lighten the batter. Combined with baking soda, it gives the cake a tender, moist crumb that stays soft for days.

Four spices work together here: cinnamon, nutmeg, allspice, and cloves. The brown sugar adds a molasses note that pairs naturally with the apple flavor. Chopped nuts give crunch, and raisins add chewy sweetness if you’re a raisin-in-baked-goods person.

Directions

Combine milk, flour and applesauce and let set in covered bowl in a warm place.

Cream sugars and butter.

Add egg and mix in salt, cinnamon, nutmeg, allspice, cloves, baking soda, and nuts or raisins.

Beat by hand. Bake at 350℉ (180℃). for 30 to 45 minutes.

Allow to cool in the pan.
