Amaretto Chocolate Cake

Ingredients

3 large eggs separated
1/4 cup sugar granulated
1/2 cup butter
1 cup brown sugar light, packed
2 1/4 cups flour, all-purpose
1/2 cup cocoa powder unsweetened
1 1/2 teaspoons baking soda
3/4 cup espresso, brewed or strong coffee, cold
3/4 cup amaretto liquer
--- Amaretto Frosting
6 tablespoons butter
1 pound powdered sugar sifted
3 tablespoons cocoa powder unsweetened
3 tablespoons amaretto liquer
2 tablespoons espresso, brewed or coffe, hot, up to 3 tablespoons

Directions

Grease and flour two 9 inch cake pans.

Preheat oven to 350 degrees F.

Beat egg whites until frothy, then beat in granulated sugar until stiff peaks form.

Set aside.

Cream butter and brown sugar until fluffy.

Beat in egg yolks 1 at a time.

Sift flour, cocoa and baking soda together.

Add to creamed mixture alternately with coffee and blend well.

Fold egg whites into batter.

Pour into prepared pans.

Bake 30 to 35 minutes or until done.

Cool 10 minutes, invert on wire rack and remove pans.

Cool completely before frosting.

Place one layer on cake plate and spread frosting on top.

Position second layer over the first.

Spread frosting on cake sides and top.

Decorate with shaved chocolate, if desired.

Amaretto Frosting: In a large bowl, cream together butter and sifted confectioners' sugar.

Add unsweetened cocoa powder, amaretto and hot coffee.

Beat until smooth.

Good As Gold Chicken (Like Kfc's and Boston's)

I went with suggestions from some of the other reviewers and used more honey (2 tablespoons) and a good bit of seasoned salt (1 teaspoon). The chicken was good, but the flavor was more subtle than I would have hoped. I also expected the sweet honey flavor to be more pronounced but it was the lime I could taste most. I was reminded more of a mild mojo flavoring than anything. I would have enjoyed something a bit more bold. As another reviewer suggested, soy sauce may be a good addition to this recipe. My girlfriend and I both still enjoyed this dish, I was just expecting something more.
