Ingredients

Amount Ingredient Preparation
2 tablespoons olive oil
2 cloves garlic minced
1 cup onion sliced
1 cup celery peeled, sliced
1 cup carrots sliced
1 teaspoon chili powder
1/4 cup green chili peppers, canned diced
2 cups mushrooms sliced
2 cups black beans
1/2 cup bean stock
2 tablespoons cilantro chopped
3 cups rice, brown cooked

Directions

In large deep saucepan heat olive oil, and saute garlic, onion,

Add chiles and mushrooms and saute 5 minues more.

Stir in beans, bean stock and cilantro. Season totaste.

Cover and simmer over low heat about 10 minutes, stirring.

Serve over rice.
