Unusual Banana Bread

Banana bread with a twist: chocolate chips, maraschino cherries, and plenty of nuts folded into a moist, mashed banana batter. Not your grandma’s loaf, but she’d approve.

Banana bread gets a glow-up with chocolate chips, chopped maraschino cherries, and a generous helping of nuts stirred into the batter.

Three mashed bananas keep the crumb moist and tender while all those mix-ins turn every slice into a little treasure hunt.

It bakes up in a single loaf pan and fills the kitchen with the kind of smell that makes people wander in asking “what’s in the oven?"

Chef Tips

  • Pat maraschino cherries dry with paper towels before chopping so they don’t add excess moisture to the batter
  • Use overripe bananas with plenty of brown spots for the sweetest, most intense banana flavor
  • Toss chocolate chips and nuts in a tablespoon of flour before folding in to keep them from sinking to the bottom
  • Test for doneness with a toothpick at 40 minutes; ovens vary and you want a moist crumb, not a dry one

Shirley

I tried this recipe instead of the regular banana bread because I wanted something a little different, and it did not disappoint.
it is so moist and melts in your mouth. I did use a stick of butter for the shortening, so maybe that is why it is so delicious. For a bread that you want to be different, I would recommend this wholeheartedly.
