Gruel bread: a rustic whole-wheat loaf built from leftover rice-and-vegetable gruel, no commercial yeast, risen overnight and baked dark. A zero-waste bread with deep, fermented flavor.

Gruel bread is what happens when you refuse to waste leftover rice and cooked vegetables. The gruel itself (soft cooked rice, mashed with whatever leftover veg you have) becomes the hydration and flavor base for a dense, whole-wheat loaf. No commercial yeast. Just flour, salt, a little oil, and time.

The wild fermentation is where the bread gets its character. Natural yeasts already living in the flour take hold during a long overnight rise in a warm spot, developing a lightly sour, deeply savory tang you don’t get from packaged yeast.

The kneading is old-school: about 300 folds by hand until the dough feels smooth and springs back when poked. That long kneading builds structure in whole wheat flour, which has sharper bran particles that tear gluten strands in shorter kneads.

A single deep slash down the center lets steam escape and gives the loaf a signature cracked ridge as it bakes dark and dense.

Kitchen Tips

  • Use cooked rice and vegetables that are smooth and moist, not dried out. If your leftovers are stiff, add a splash of water and mash until porridge-like.
  • Knead until the dough feels slightly tacky but not sticky. Too much flour during kneading creates a dry, crumbly loaf.
  • Cover with a damp (not wet) towel during the overnight rise. Wet towels stick to the dough and stall the fermentation.
  • Bake at 375°F (190°C) the full 75 to 90 minutes, until the sides and bottom are genuinely dark brown. Underbaked gruel bread stays gummy inside.
  • Cool completely before slicing. Warm whole-wheat bread tears; cooled bread cuts clean.

Variations

  • Stir a spoonful of molasses or honey into the gruel for a sweeter, slightly darker loaf.
  • Add a handful of sunflower seeds, sesame seeds, or chopped walnuts before the final knead for texture.
  • Brush the top with milk or egg wash before baking instead of water for a glossier crust.

Directions

Add salt and oil to gruel.

Add flour to gruel, first by stirring, then with hands, until a dough of kneadable consistency is formed.

Leave slightly moist, as more flour is added while dough is kneaded on floured board until smooth (about 300 times).

Make into loaf, Place in a oiled bread pan.

Brush top with water. Make a ½ inch deep cut down the center of the loaf.

Cover with damp towel and set in warm place overnight.

Bake at 375℉ (190℃) F for 75 to 90 minutes, until sides and bottom are dark brown.
