The simplicity is the point. Traditional French bread relies on technique and time rather than a long ingredient list, and this bread machine version captures that philosophy. The small amount of shortening gives the crumb a slightly softer texture than a purely lean dough, making it more forgiving in the machine environment where you can’t control humidity and oven steam.
Water temperature matters even in a bread machine. Too hot and you’ll kill the yeast before it activates. Too cold and it won’t rise properly. Room temperature to slightly warm (around 80°F / 27°C) is the sweet spot.
