Six ingredients, one bread machine, and about three hours of hands-off time. This French bread recipe is stripped down to the basics: flour, water, yeast, a touch of sugar, salt, and shortening. The machine handles all the kneading, rising, and baking while you do something else entirely.

The simplicity is the point. Traditional French bread relies on technique and time rather than a long ingredient list, and this bread machine version captures that philosophy. The small amount of shortening gives the crumb a slightly softer texture than a purely lean dough, making it more forgiving in the machine environment where you can’t control humidity and oven steam.

Water temperature matters even in a bread machine. Too hot and you’ll kill the yeast before it activates. Too cold and it won’t rise properly. Room temperature to slightly warm (around 80°F / 27°C) is the sweet spot.

Pro Tips

  • Measure flour by weight if you can. Bread machine recipes are sensitive to flour-to-water ratios. A packed cup versus a spooned cup can throw off the whole loaf.
  • Add ingredients in the order your machine manual specifies. Some machines want wet first, others want dry. Getting this wrong affects how the dough comes together.
  • Check the dough ball after 5 minutes of kneading. It should be smooth and slightly tacky. Add a tablespoon of water or flour if it looks too dry or too sticky.

Variations

  • Brush the top with an egg wash before the final bake cycle for a glossier, more golden crust.
  • Add dried rosemary and garlic powder to the dry ingredients for an herb-infused loaf.
