1 hrsThis beef stew takes a sharp turn from the usual carrots-and-potatoes routine and goes somewhere much more interesting.
Chunks of stewing beef get browned and braised in beef broth until melt-in-your-mouth tender, then the sauce gets thickened with a cornstarch and soy sauce slurry that gives it a glossy, savory depth.
Sweet green peas and diced pimentos add pops of color and freshness.
Spoon it over fluffy white rice and you’ve got a satisfying dinner that bridges comfort food and Asian-inspired flavors.
Pro Tips
- Brown the beef in batches so each piece gets a proper sear; crowding the pan creates steam instead of crust
- Mix the cornstarch with soy sauce and water before adding to the skillet so it doesn’t clump
- Add the peas and pimentos at the very end so they stay vibrant and don’t turn to mush
- This stew reheats well, so leftovers over rice the next day are just as good
