Chewy, golden cheese bagels made easy with a bread machine. Boiled and baked with a crusty exterior and soft, cheesy center. Just 6 ingredients and about an hour from start to fresh bagels.

Homemade bagels sound intimidating until you realize your bread machine does most of the heavy lifting.

This recipe uses the machine for the first knead, then you shape, boil, and bake the bagels yourself. The result is chewy, golden rings with a shattering crust and a soft, cheese-laced interior that store-bought bagels simply cannot match.

Six ingredients. One hour. A kitchen that smells like a New York bakery.

Pro Tips

  • Pull the dough from the bread machine after the first knead cycle (about 20-30 minutes); don’t let it go through the full bread cycle
  • Drop a small piece of test dough into the boiling water first; if it floats, your bagels are ready to boil
  • Boil each side for just 30 seconds; over-boiling makes them dense and tough
  • Sprinkle cornmeal on the baking sheet to prevent sticking and add a subtle crunch to the bottom
  • Top with sesame seeds, poppy seeds, or everything bagel seasoning before baking

Directions

Reserve half of the cheese to sprinkle on top of bagels before baking.

  1. Insert ingredients in bread machine according to manufacturer’s instructions. Remove the dough from the machine after the first knead - approximately 20 to 30 minutes.

  2. Place dough on a floured surface. Divide into 8 parts. Form balls, gently press thumb through center of ball and slowly stretch into bagel shape.

  3. While bagels rise, bring three quarts of water and one tablespoon of sugar to a rapid boil in a large saucepan. Drop test dough (see hints below).

  4. Using a slotted spoon, drop 2 to 3 bagels into rapidly boiling water. Boil on each side for ½ minutes. Remove and cool on rack 1 minute, brush with egg and sprinkle with sesame or poppy seeds, if desired.

  5. Bake at 400 on a baking sheet sprinkled with cornmeal, until golden - approximately 15 minutes.
