30 minForget the boxed brownie mixes with ingredient lists you can’t pronounce. This one is made from scratch with whole wheat pastry flour, carob powder, and pitted dates, and it stores in your pantry until you’re ready to bake.
When the craving hits, blend the dates with vanilla soy milk until thick and chunky, stir into the dry mix, and slide the pan into the oven. Twenty minutes later you’ve got fudgy, naturally sweetened brownies with zero refined sugar.
This also makes a thoughtful homemade gift. Jar up the dry mix, bag the dates separately, and attach the baking instructions.
Chef Tips
- Medjool dates work best. They’re softer and sweeter than Deglet Noor, so they blend more smoothly into the soy milk.
- Don’t over-blend the date mixture. Small chunks of date in the batter create little pockets of caramel-like sweetness in the finished brownie.
- Test for doneness early. These are meant to be fudgy, not cakey. Pull them when the center is just barely set and they’ll firm up as they cool.

Sift together first five ingredients.
Store in an air-tight container.
Store dates separately in an air-tight container or original package.
Attach these instructions: To prepare brownies, preheat oven to 350℉ (180℃).
In a blender or food processor, blend 2 cups of vanilla soy milk and dates until almost smooth (small chunks of dates are ok).
Set aside.
Pour flour mixture into a mixing owl.
Add date mixture, and stir well to combine.
Spread evenly in a lightly oiled 9 inch x 13 inch baking pan.
Bake for 20 minutes, or until middle is done.
