Chicken and Barley Soup

Ingredients

4 cups chicken broth
1 cup water
1 cup onion chopped
1 cup carrots sliced
1/2 cup celery sliced
1 1/2 ounces pearl barley uncooked
1/2 teaspoon thyme leaves dried, crushed
1/4 teaspoon turmeric optional
12 ounces chicken cubed, cooked
1 tablespoon parsley leaves

Directions

In large saucepan, combine all ingredients except chicken and parsley.

Bring to a boil.

Reduce heat; simmer 30 to 40 minutes or until barley is tender.

Add chicken and parsley.

Cook until thoroughly heated.
