Hot turkey sandwich melts loaded with cheddar, mustard, and dill pickles, baked under foil until gooey. Just 5 minutes prep and a brilliant way to use leftover turkey.

Chopped turkey gets tossed with shredded cheddar, light mayo, a hit of mustard, and finely chopped onion, then piled onto buns with dill pickle slices and baked under foil until everything melts into a warm, gooey, slightly tangy bite.
Five minutes of prep, fifteen minutes in the oven, and dinner is handled.
Pro Tips
- Works equally well with leftover chicken or rotisserie chicken from the store
- Use sharp cheddar for more flavor punch against the mild turkey
- Don’t skip the pickles; they add the crunch and acidity that keeps these from tasting flat
