2 hrsThe name says it all. This bread pizza is so simple that the dough comes together with a spoon, no kneading required. Yeast, flour, sugar, salt, and water get stirred into a shaggy batter, spread into pans, and left to rise for an hour. That’s your crust.
The result is a thick, focaccia-style base that’s chewier and more substantial than a typical thin-crust pizza. Load it up with pizza sauce, shredded mozzarella, and cooked sausage or pepperoni, and the oven does the rest.
The heat trick here is clever: start at a high temperature and immediately drop it down. That initial blast of heat gives the bottom crust a good sear and keeps it from getting soggy under all those toppings, while the lower temperature lets everything cook through without burning the cheese.
Chef Tips
- Use warm water (around 110°F / 43°C) to activate the yeast. Too hot kills it, too cold won’t get it going.
- Grease the pans generously. The wet dough sticks, and you want the bottom to release cleanly.
- Spread the dough with oiled fingers. A spoon drags it and creates uneven thickness.
- Make sure your sausage is fully cooked before topping. The bake time is for melting the cheese, not cooking raw meat.

Dissolve yeast in warm water.
Add sugar, salt and flour. Mix well with spoon and spread in two greased 9×13 inch pans.
Let rise for one hour.
Spread about 1½ pints of your favorite pizza sauce on top.
Add 12 ounce shredded Mozzarella cheese and one pound cooked sausage or pepperoni.
Put pizza in oven preheated to 500 degrees F., reduce heat immediately to 400℉ (200℃)., and bake 35 minutes or until cheese is melted.
