40 minDessert pizza is the kid-party rescue recipe that turns a tube of refrigerated chocolate chip cookie dough into something resembling a fruit tart. Bake the dough flat in a pizza pan, top with whipped cream and assorted fresh fruit, drizzle with strawberry dessert sauce, and you’ve got the centerpiece of a 12-person celebration in 40 minutes.
Foil-lining the pizza pan is the trick that makes serving easy. Once the cookie crust cools, you can lift it out cleanly onto a serving plate without breaking the giant cookie. Skip the foil, and you’ll be cutting it in the pan and serving wedges off the metal.
The 20-minute bake at 350°F (175°C) is calibrated for a soft, chewy cookie crust that holds toppings without going cracker-crisp. Pull at golden brown edges; the center will look slightly underbaked but will firm up as it cools.
Use seasonal fresh fruit: strawberries, kiwi, blueberries, mandarin oranges, or sliced peaches all work beautifully and create a rainbow effect that looks bakery-made.
Kitchen Tips
- Cool the cookie crust completely before adding whipped topping. Warm cookie melts the cream into a soggy mess in seconds.
- Spread the whipped topping to the edges of the cookie. A skimpy layer leaves dry crust around the rim.
- Pat fruit dry with a paper towel before adding. Wet fruit weeps onto the whipped cream and creates colored streaks.
- Serve the same day. The cookie crust softens overnight under the toppings and you lose the contrast that makes this dessert work.
Variations
- Use Greek yogurt sweetened with honey instead of whipped topping for a tangier, less-sweet base.
- Top with sliced bananas, chocolate chips, and warm caramel sauce for a banana split version.
- Make individual mini pizzas using portioned dough rounds for kid parties.
