A make-ahead Caesar dressing mix that sits in your pantry for months and saves you the “do I have all the ingredients?" moment right before dinner. The dry mix is a simple combination of lemon zest, oregano, dried minced garlic, grated Parmesan, and seasoned pepper packed into a jar.

When you want dressing, shake the mix with lemon juice and oil in a jar until emulsified and chill briefly before tossing. The dried garlic softens in the acidic liquid, so even though it reads harsh in the jar, the finished dressing mellows out.

This homemade route lets you skip the anchovy-heavy commercial bottles and the mystery stabilizers. You do lose the classic anchovy and raw egg yolk of a true Caesar, so expect something lighter, cleaner, and more herb-forward than the real deal.

Kitchen Tips

  • Use freshly grated Parmesan (not the green can stuff) for real nutty depth. It dries right into the mix.
  • Label the jar with the date. The mix holds flavor for 3 to 4 months before the aromatics fade.
  • Let the shaken dressing rest 15 minutes before tossing. The dried garlic and oregano rehydrate and release their flavor.
  • Pair with crisp romaine and croutons; toss right before serving so the leaves stay crunchy.

Variations

  • Whisk in a teaspoon of anchovy paste or Worcestershire for a more authentic Caesar punch.
  • Swap half the oil for plain Greek yogurt to get a creamy, lighter version.

Directions

DON’T FORGET TO USE W/HERB-STUFF ING MIX CROUTONS (SEE INDEX) SALAD DRESSING MIX: Combine all ingredients in a small bowl until evenly distributed.

Put mixture in a foil packet or 1-pint glass jar. Label.

Store in a cool, dry place.

Use within 3 to 4 months. Makes about 3 tablespoons Caesar Salad Dressing Mix, enough for ¾ cup Caesar Salad Dressing. CAESAR SALAD DRESSING: Combine ingredients in a glass jar. Shake until well-blended. Chill before serving. Makes about ¾ cup of Caesar Salad Dressing.
